Baked Parmesan Scallop Pasta

Ingredients:

1/2 lb. large scallops
1/4 C. plain breadcrumbs
1 tsp. margarine or butter
1/4 C. white wine
2 Tb. grated Parmesan cheese
Salt and freshly ground pepper
1/4 C. chopped fresh parsley

Cooking instructions:

> Preheat oven to 350 degrees
> Rinse scallops and place in a small baking dish just large enough to hold them in one layer
> Sprinkle with bread crumbs and toss to coat
> Cut margarine into bits and divide among the scallops
> Add wine to baking dish and bake for 15 minutes.
> Remove from oven and turn on broiler
> Sprinkle scallops with Parmesan cheese and place under broiler for 5 to 10 seconds. (Watch carefully- they will brown quickly)
> Season with salt and pepper to taste.

** TIP: Serve on bed of favorite pasta (see recipe below)

Olive Garden Fettucine Alfredo

Makes 4 servings

Ingredients:

8 ounces Cream cheese — cut in bits
3/4 cup Parmesan cheese — grated
1/2 cup Butter or margarine
1/2 cup Milk
8 ounces Fettuccine; cook — drain

Cooking instructions:

> In large saucepan combine cream cheese, Parmesan, butter and milk, stirring constantly until smooth.
> Toss pasta lightly with sauce, coating well.
