Steak and potatoes

I was a bad wifey last week and barely cooked so tonight to make it up to my hubs I asked him what he wanted for dinner and he said STEAK! Ask and you shall receive. I thought this would be a great time to try out a couple different side dish recipes too — Cheesy Smashed Potatoes and Nikki’s Steak Sauce.

Cheesy Smashed Potatoes

Makes 6 servings (1/2 cup=1 serving)
Calories/serving = 130
WW pts/serving = 3

INGREDIENTS

1 lb. red potatoes (about 3 small), cut into chunks
1 cup bite-size cauliflower florets
1/4 cup BREAKSTONE’S Reduced Fat or KNUDSEN Light Sour Cream
1 cup KRAFT 2% Milk Shredded Reduced Fat Sharp Cheddar Cheese

[NOTES: I use russet potatoes instead.]

COOKING INSTRUCTIONS

> Place potatoes and cauliflower in large saucepan. Add enough water to cover.
> Bring to boil on high heat. Reduce heat to medium; simmer 20 min. or until vegetables are tender. Drain; return to pan.
> Add sour cream; mash until vegetable mixture is light and fluffy. Stir in cheese.

Cheese and potatoes. That can’t be bad. Hide some veggies in, even better!

Nikki Steak Sauce

INGREDIENTS

olive oil
minced garlic, cut really small
dried parsley
minced onion (optional)

COOKING INSTRUCTIONS

> Pour olive oil into a small dish
> Combine all ingredients and mix with olive oil
> Let sit for a while until more garlic than oil taste

ENJOY! :)

He put it on everything: potatoes, asparagus and steak. He loved it!

If you like garlic and onions, you will LOVE this!
